Ingredients
  

For the Roll-Ups

  • 2 cups Shredded Chicken cooked
  • 2 cups Shredded Colby Jack cheese
  • 1/3 cup Sugar-Free BBQ Sauce
  • 1 tablespoon Olive Oil
  • 1 large Jalapeno finely chopped
  • 1/4 cup Red Onion finely chopped

For Garnish

  • 2 tablespoons Green Onions chopped

Instructions
 

  • Get your oven ready by preheating it to 400°F (200°C), then line a baking sheet with parchment paper.
  • On the lined baking sheet, gently place the shredded cheese into eight separate circles, making sure to leave some space between each one.
  • In a skillet, heat the olive oil over medium heat. Add the shredded chicken, chopped red onion, and jalapeno. Sauté this mixture for a few minutes until the vegetables start to soften, then set it aside to cool down a bit.
  • Carefully slide the baking sheet with your cheese circles into the preheated oven. Bake for about 6-8 minutes, or until the edges of the cheese turn golden brown and look crispy.
  • Take the baking sheet out of the oven and let the cheese circles cool for a few minutes until they are easy to handle and pliable.
  • Spoon a layer of your delicious BBQ chicken filling right down the center of each warm cheese circle.
  • Gently roll the cheese up over the filling to create your tasty roll-ups.
  • Allow the roll-ups to cool completely so the cheese can crisp up nicely. Serve them garnished with fresh chopped green onions.
