For the Roll-Ups
- 2 cups Shredded Chicken cooked
- 2 cups Shredded Colby Jack cheese
- 1/3 cup Sugar-Free BBQ Sauce
- 1 tablespoon Olive Oil
- 1 large Jalapeno finely chopped
- 1/4 cup Red Onion finely chopped
For Garnish
- 2 tablespoons Green Onions chopped
Get your oven ready by preheating it to 400°F (200°C), then line a baking sheet with parchment paper.
On the lined baking sheet, gently place the shredded cheese into eight separate circles, making sure to leave some space between each one.
In a skillet, heat the olive oil over medium heat. Add the shredded chicken, chopped red onion, and jalapeno. Sauté this mixture for a few minutes until the vegetables start to soften, then set it aside to cool down a bit.
