Ingredients
  

Biscuits

  • 0.25 cup Melted butter
  • 4 large Eggs
  • 0.33 cup Coconut flour
  • 0.25 teaspoon Kosher salt
  • 0.25 teaspoon Baking powder
  • 1 cup Shredded cheddar cheese

Gravy

  • 1 pound Ground pork sausage
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 0.5 teaspoon Xanthan gum
  • Kosher salt to taste
  • Pepper to taste

Instructions
 

  • Get Ready: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Whip Up Biscuits: In a large mixing bowl, combine the melted butter, eggs, coconut flour, kosher salt, baking powder, and shredded cheddar cheese. Stir everything together until well combined, forming a thick batter.
  • Bake Biscuits: Scoop about 3 tablespoons of the batter for each biscuit and drop them onto your prepared baking sheet, leaving about 2 inches between each. You should get 6 delicious biscuits. Bake for 15 minutes, or until they turn golden brown and are cooked through. Remove from the oven and set aside.
  • Cook Sausage: While the biscuits are baking, heat a large skillet over medium-high heat. Add the ground pork sausage and cook, breaking it up with a spoon, until it's fully browned and crumbled. Drain any excess fat.
  • Simmer Gravy: Stir in the chicken broth, heavy cream, and xanthan gum with the cooked sausage. Bring the mixture to a gentle simmer, then reduce the heat to low. Continue to cook, stirring occasionally, until the gravy thickens to your desired consistency. Season with a pinch of salt and pepper to taste.
  • Serve & Savor: Carefully slice each warm biscuit in half. Generously spoon the creamy, flavorful sausage gravy over the biscuits. Serve immediately and enjoy this incredibly satisfying, low-carb breakfast! Store any leftovers in an airtight container in the refrigerator.
