  • 2 tbsp almond flour or 1 tbsp coconut flour + 1 tbsp almond milk
  • 6-8 berries blueberries fresh or frozen, do not thaw
  • 0.5 tbsp melted butter or coconut oil
  • 2 tbsp unsweetened almond milk
  • 0.5 tbsp keto sweetener erythritol, monk fruit, stevia
  • 0.25 tsp baking powder
  • 0.25 tsp vanilla extract

Instructions
 

  • Combine almond flour, sweetener, baking powder, and salt in a microwave-safe mug.
  • Add melted butter, almond milk, and vanilla; stir until smooth and thick.
  • Gently fold in blueberries evenly throughout the batter.
  • Microwave on high for approximately 90 seconds until risen and set.
  • Allow to cool for 30 seconds, then enjoy topped with optional whipped cream or lemon glaze.
