Crisp the Bacon: In a 10-inch oven-proof skillet, cook the chopped bacon over medium heat until it's deliciously crisp. Remove the bacon with a slotted spoon and let it drain on a paper towel-lined plate. Keep at least 2 tablespoons of the bacon grease in the skillet for amazing flavor (you might want a little more if using cast iron) and take it off the heat to cool.
Whisk the Eggs: In a large bowl, whisk together the eggs, heavy whipping cream, minced garlic, salt, pepper, and about two-thirds of your crispy bacon.
Start on Stovetop: Place your skillet back over medium-low heat and swirl the remaining bacon grease to coat the bottom and sides. Pour the egg mixture into the skillet. Cook gently, without stirring, until the edges are set but the center still has a slight jiggle – this usually takes 7 to 10 minutes.
Add Brie & Bacon: Carefully arrange the thinly sliced brie over the top of the partially set frittata. Sprinkle the remaining crispy bacon over everything.
Broil to Perfection: Preheat your broiler to high and position an oven rack on the second highest setting. Broil the frittata for 2 to 5 minutes, watching very closely, until it's beautifully puffed and golden brown. Be careful not to let it burn!
