- 1.25 cups almond flour
- 0.5 cup powdered Swerve sweetener
- 0.25 cup cocoa powder
- salt Pinch
- 0.5 cup melted butter
- 1 tsp vanilla extract
- Water as needed
- 3 oz sugar-free dark chocolate chopped
- 0.5 oz cocoa butter or coconut oil
Combine almond flour, sweetener, cocoa powder, and salt in a large bowl. Mix in melted butter and vanilla until dough forms.
If crumbly, add water 1 tbsp at a time until workable.
Shape into 1-inch balls and freeze for at least 1 hour.
Melt chopped chocolate and cocoa butter over simmering water until smooth.
Dip frozen truffles into the melted chocolate, coating thoroughly.
Remove with a fork, tap off excess, and place on parchment paper to set. Add sprinkles immediately if desired. Repeat with remaining truffles.
