Keto Brownie Truffles

Ingredients
  

  • 1.25 cups almond flour
  • 0.5 cup powdered Swerve sweetener
  • 0.25 cup cocoa powder
  • salt Pinch
  • 0.5 cup melted butter
  • 1 tsp vanilla extract
  • Water as needed
  • 3 oz sugar-free dark chocolate chopped
  • 0.5 oz cocoa butter or coconut oil

Instructions
 

  • Combine almond flour, sweetener, cocoa powder, and salt in a large bowl. Mix in melted butter and vanilla until dough forms.
  • If crumbly, add water 1 tbsp at a time until workable.
  • Shape into 1-inch balls and freeze for at least 1 hour.
  • Melt chopped chocolate and cocoa butter over simmering water until smooth.
  • Dip frozen truffles into the melted chocolate, coating thoroughly.
  • Remove with a fork, tap off excess, and place on parchment paper to set. Add sprinkles immediately if desired. Repeat with remaining truffles.
