Ingredients
  

  • 8 tbsp salted butter softened, not melted
  • 2 large egg whites
  • 2 1/4 cups almond flour
  • Salt to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the softened butter and almond flour with an electric hand mixer on low to medium speed.
  • Add the egg whites and a pinch of salt, mixing until the dough is smooth and uniform.
  • Roll the dough between two sheets of parchment paper to about 1/8 inch thick. Remove the top sheet and place the bottom sheet with the dough onto a baking sheet.
  • Score the dough into 1 1/2 inch squares using a knife or pizza cutter, then sprinkle with salt.
  • Bake for 10-15 minutes until lightly browned. Let cool before breaking apart along the scores.
  • Enjoy right away or store in a lidded container at room temperature for up to a week. Refrigeration extends shelf life but may reduce crunchiness.
