Keto Butter Crackers

- 8 tbsp salted butter softened, not melted
- 2 large egg whites
- 2 1/4 cups almond flour
- Salt to taste
Preheat your oven to 350°F (175°C).
In a large bowl, mix the softened butter and almond flour with an electric hand mixer on low to medium speed.
Add the egg whites and a pinch of salt, mixing until the dough is smooth and uniform.
Roll the dough between two sheets of parchment paper to about 1/8 inch thick. Remove the top sheet and place the bottom sheet with the dough onto a baking sheet.
Score the dough into 1 1/2 inch squares using a knife or pizza cutter, then sprinkle with salt.
Bake for 10-15 minutes until lightly browned. Let cool before breaking apart along the scores.
Enjoy right away or store in a lidded container at room temperature for up to a week. Refrigeration extends shelf life but may reduce crunchiness.
