Ingredients
  

  • 1.5 cups Shredded mozzarella
  • 2 ounces Cream cheese
  • 2 Egg
  • 0.75 cup Almond flour
  • 0.5 teaspoon Baking powder
  • 0.5 cup Ricotta
  • 1 cup Cooked Italian sausage crumbled
  • 1 teaspoon Dried oregano
  • 1 teaspoon Coarse salt

Instructions
 

  • Preheat your oven to 375°F.
  • In a microwave-safe bowl, combine 1 1/2 cups shredded mozzarella and 2 ounces cream cheese. Heat in the microwave for 90 seconds, stirring every 30 seconds until melted.
  • Add 1 egg, almond flour, and baking powder to the bowl. Mix with your hands until a dough forms, then shape into a large ball.
  • Divide the dough into 3 equal pieces and roll each into an 8-inch circle between parchment paper.
  • Transfer the circles to a baking sheet.
  • In a medium bowl, combine the cheeses and cooked Italian sausage for the filling.
  • Place 1/3 of the filling on one half of each dough circle. Fold the dough over and seal the edges with a fork.
  • Beat the remaining egg and brush it over the tops of the calzones. Cut 3-4 slits in each calzone and sprinkle with oregano and salt.
  • Bake for 20-26 minutes until golden brown.
