  • 0.5 cup Almond Flour 60g
  • 3 tbsp Powdered Sugar Alternative 36g
  • 0.5 tsp Cinnamon
  • 0.25 tsp Allspice
  • 1 tsp Baking Powder
  • 0.5 cup Shredded Carrots 60g
  • 1 Egg
  • 2 tbsp Melted Butter 30g
  • 1 tbsp Milk 15ml
  • 2 tbsp Cream Cheese 30g
  • 2 tsp Powdered Sugar Alternative (Frosting) 8g
  • 1 tsp Milk (for frosting) optional, for thinning

Instructions
 

  • Mix almond flour, powdered sugar, cinnamon, allspice, and baking powder in a bowl.
  • Add egg, melted butter, and milk; stir until smooth.
  • Gently fold in shredded carrots.
  • Pour batter into a greased large mug. Microwave for 3 minutes; cool slightly.
  • Combine cream cheese, powdered sugar alternative, and milk for frosting.
  • Spread frosting on cooled cake; garnish with extra carrots if desired.

Notes

Feel free to adjust the frosting consistency with more milk if needed. Enjoy your healthy keto treat!
