Ingredients
  

  • 1 large head cauliflower cut into small florets
  • 2 tbsp olive oil
  • 1 jar marinara sauce 24oz
  • 2 cups shredded mozzarella cheese
  • salt to taste
  • pepper to taste
  • garlic powder to taste
  • Italian seasoning to taste
  • pepperoni or toppings of choice

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a 9x13 baking dish, combine the cauliflower with olive oil, salt, pepper, and garlic powder.
  • Spread the cauliflower in a single layer and bake for 20-25 minutes until slightly browned.
  • Take the dish out and pour the marinara sauce evenly over the cauliflower. Top with shredded cheese and Italian seasoning.
  • Add pepperoni and any other desired toppings.
  • Return the casserole to the oven for 12-15 minutes until the cheese is melted and golden.
