Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1.5 pounds ground beef (or ground turkey for a leaner option)
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese softened
  • 2/3 cup shredded cheddar cheese
  • 1/4 cup crumbled cooked bacon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Toss in the chopped onion and sauté for 3-4 minutes until it becomes wonderfully soft.
  • Add your ground beef or turkey to the pot. Cook until it's nicely browned, breaking it up with a spoon, which usually takes about 7-8 minutes. Drain any excess fat for a healthier option.
  • Pour in the chicken broth and bring the mixture to a gentle simmer.
  • Stir in the softened cream cheese until it fully melts, making the soup incredibly creamy.
  • Reduce the heat to low. Add the heavy cream, shredded cheddar, crumbled bacon, salt, and pepper. Stir well until the cheese is fully melted and incorporated.
  • Taste and adjust seasonings as needed.
  • Serve your delicious soup immediately! Top with your favorite burger garnishes like fresh chopped tomatoes, onions, or pickles for extra flavor.
