Ingredients
  

  • 1 medium onion chopped
  • 1.5 pounds ground beef (or ground turkey)
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese (4 ounces), softened
  • 2/3 cup shredded cheddar cheese
  • 1/4 cup crumbled bacon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • In a large soup pot, warm a little oil over medium heat. If you've cooked fresh bacon, feel free to use the delicious bacon grease for extra flavor!
  • Add the chopped onion and cook for 3-4 minutes until it becomes soft and translucent.
  • Next, add the ground beef (or turkey) to the pot. Cook until it's fully browned, breaking it into small pieces as it cooks, which should take about 7-8 minutes.
  • Pour in the chicken broth and bring the mixture to a gentle simmer, allowing the flavors to start blending beautifully.
  • Stir in the softened cream cheese until it's completely melted and creates a lovely creamy base for your soup. Breaking it into small pieces before adding can help it melt faster.
  • Reduce the heat to low. Add the heavy cream, shredded cheddar, crumbled bacon, salt, and black pepper. Stir everything until the cheese is melted and all ingredients are well combined. Taste and adjust seasonings if you like.
