Ingredients
  

  • 6 cups shredded chicken cooked
  • 4 cups cauliflower rice steamed, or thawed and drained
  • 2 cups broccoli florets steamed, or thawed and drained and cut into small pieces
  • 1 cup cheddar cheese
  • 4 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup half and half
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cheddar cheese for topping

Instructions
 

  • Kick things off by preheating your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, cauliflower rice, and broccoli florets.
  • Now, let's make the creamy sauce! In a separate bowl, whisk together the 1 cup of cheddar cheese, softened cream cheese, mayonnaise, sour cream, half and half, garlic powder, onion powder, salt, and black pepper until it's smooth and perfectly blended.
  • Pour this luscious sauce over the chicken and veggie mix in the large bowl. Stir gently until everything is wonderfully coated.
  • Transfer this delicious mixture into a greased 9x13 inch baking dish, spreading it out evenly.
  • Finish it off by sprinkling the remaining 1 cup of cheddar cheese generously over the top of the casserole.
  • Bake in your preheated oven for about 30 minutes, or until the casserole is bubbling, golden, and heated through.
