Ingredients
  

  • 4 cups cooked chicken (shredded or cubed)
  • 12 ounces frozen cauliflower (microwaved or steamed until tender and well-drained)
  • 1.5 cups shredded cheddar cheese (divided)
  • 1 cup bacon crumbles (divided)
  • 0.5 cup chopped green onions (divided)
  • 4 ounces cream cheese (softened)
  • 0.5 cup sour cream (softened)
  • 0.5 cup mayonnaise
  • 0.25 cup heavy cream (or half and half for a lighter option)
  • 1 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder

Instructions
 

  • Get your oven ready by preheating it to 400°F. Lightly spray a 9x13 inch baking dish with cooking spray.
  • In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, heavy cream, salt, garlic powder, and onion powder. Mix well until everything is smooth and fully blended.
  • Gently fold the cooked chicken and tender cauliflower into your creamy sauce. Then, stir in half of the shredded cheddar cheese, half of the bacon crumbles, and half of the chopped green onions.
  • Spoon this delicious mixture evenly into your prepared baking dish. Finish by sprinkling the remaining cheddar cheese, bacon crumbles, and green onions over the top.
  • Bake for about 30 minutes, or until the casserole is golden brown, bubbly, and heated all the way through. Let it cool for a few minutes before serving to enjoy the best flavors!
