In a mixing bowl, combine the ground chicken with 1/3 cup of the grated Parmesan cheese, Italian seasoning, salt, and pepper. Mix everything thoroughly until well combined.
Gently roll the seasoned chicken mixture into 8 small, evenly sized balls. Place one chicken ball directly in the center of each zero-carb street taco-sized tortilla.
Heat a drizzle of cooking oil in a large skillet over medium-high heat. Ensure the oil lightly coats the pan.
Carefully place the tortillas, chicken-side down, into the hot skillet. Using a spatula, firmly press down on each chicken ball, smashing it flat against the tortilla and the skillet. Cook until the chicken is completely cooked through and the tortilla edges become wonderfully crispy and golden.
Once cooked, top each smash burger with about a tablespoon of marinara sauce and two slices of fresh mozzarella cheese. Allow the cheese to melt beautifully from the residual heat, or cover the skillet for a minute to help it along.
Sprinkle with fresh basil just before serving.
