Chicken Coating

  • 2.5 pounds boneless, skinless chicken breast
  • 1 large egg
  • 1 cup grated Parmesan cheese
  • 1/2 tablespoon dried minced garlic
  • 1/2 tablespoon dried minced onion
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried parsley
  • 1/4 tablespoon freshly ground black pepper
  • Pinch salt

Toppings

  • 1 cup marinara sauce choose a low-sugar option for keto
  • 6 ounces shredded mozzarella cheese

Instructions
 

  • Preheat your oven to a cozy 400°F (200°C). Line a large baking sheet with aluminum foil and give it a light spray with cooking spray – this makes cleanup a breeze!
  • Grab two small, wide bowls. In the first bowl, whisk your egg until it's well-beaten. In the second bowl, combine the grated Parmesan cheese with all the wonderful dried spices: minced garlic, minced onion, oregano, basil, parsley, black pepper, and a tiny pinch of salt. Mix these together thoroughly.
  • Take each piece of chicken and dip it into the beaten egg, making sure both sides are coated. Then, transfer it to the cheesy spice mixture, pressing gently so the chicken is fully covered with that delicious coating. Place your perfectly coated chicken pieces onto the prepared baking sheet.
  • Pop the chicken into the preheated oven and bake for 20 to 30 minutes. You're aiming for an internal temperature of about 145-150°F (63-66°C) at this stage.
  • Carefully remove the baking sheet from the oven. Now for the good part! Spoon a generous amount of marinara sauce over each chicken breast, then sprinkle them generously with the shredded mozzarella cheese.
  • Return the baking sheet to the oven and bake for another 5 to 10 minutes. You'll know it's ready when the chicken reaches an internal temperature of 160°F (71°C) (a meat thermometer is your friend here!) and the mozzarella is gloriously melted, bubbly, and slightly golden. For an extra crisp, golden cheese topping, you can very carefully broil it for just a minute or two at the very end – keep a close eye on it so it doesn't burn!
  • Let it cool for a moment and then serve up your delicious, healthy Keto Chicken Parmesan!
