- 1/2 cup almond flour
- 2 tbsp melted butter
- 3/4 cup sugar-free chocolate chips
- 12 oz cream cheese
- 3 large eggs
- 2 tbsp sour cream
- 2 tbsp cottage cheese (or extra sour cream)
- 1/3 cup Joy Filled Eats Sweetener (or alternatives)
- 1 tsp vanilla
- pinch of salt
Preheat your oven to 350°F (175°C) and prepare an 8x8 inch pan with cooking spray.
In the baking dish, combine almond flour and melted butter, pressing down to create a thin crust. Add 1/2 cup of chocolate chips on top.
For the filling, blend the cream cheese, eggs, sour cream, cottage cheese, sweetener, vanilla, and salt in a food processor until fluffy. Pour this mixture over the crust.
Bake for 20-25 minutes until the edges are golden and the center is set.
Top with the remaining chocolate chips, let cool to room temperature, then chill for at least an hour before serving.
