Ingredients
  

For the Crust

  • 1/2 cup almond flour
  • 2 tablespoons melted butter

For the Filling

  • 12 ounces cream cheese softened
  • 3 large eggs
  • 2 tablespoons sour cream
  • 2 tablespoons cottage cheese (or extra sour cream)
  • 1/3 cup preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1 pinch salt

For Chocolate Chips

  • 3/4 cup sugar-free chocolate chips divided (1/2 cup for crust, 1/4 cup for topping)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper or give it a light spray with non-stick spray for easy removal.
  • In your prepared pan, combine the almond flour and melted butter. Press this mixture firmly into the bottom of the pan to create a thin, even crust. Sprinkle about two-thirds (1/2 cup) of your sugar-free chocolate chips evenly over the crust.
  • In a food processor or a large mixing bowl (using an electric mixer), combine the softened cream cheese, eggs, sour cream, cottage cheese (or extra sour cream), sweetener, vanilla extract, and a pinch of salt. Blend until the mixture is wonderfully smooth and fluffy.
  • Gently pour this creamy cheesecake filling over your chocolate chip crust. Pop the pan into the preheated oven and bake for 20 to 25 minutes, or until the edges are lightly golden and the center just barely jiggles when you gently shake the pan.
  • Once baked, remove from the oven and immediately sprinkle the remaining one-third (1/4 cup) of sugar-free chocolate chips on top. Let the bars cool completely to room temperature, then place them in the refrigerator to chill for at least an hour. Chilling makes them firm and even more delicious!
