Equipment

  • Donut Pan
  • Mixing Bowls
  • Whisk
  • Wire Rack

Ingredients

Donuts

  • 1/3 cup coconut flour
  • 1/3 cup Swerve Sweetener or your preferred keto-friendly granulated sweetener
  • 3 tablespoons cocoa powder
  • 2 tablespoons unflavored whey protein powder or egg white protein powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup butter melted
  • 1 teaspoon vanilla extract
  • 1/3 cup brewed coffee or water coffee enhances the chocolate flavor!

Chocolate Glaze

  • 1/4 cup powdered Swerve Sweetener or your preferred keto-friendly powdered sweetener
  • 1 tablespoon cocoa powder
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • 1.5 tablespoons water or cold coffee as needed

Instructions

  • Prepare Your Oven & Pan: Preheat your oven to 325°F (160°C). Lightly grease a donut pan to ensure your delicious donuts won't stick!
  • Combine Dry Ingredients: In a medium bowl, whisk together the coconut flour, sweetener, cocoa powder, protein powder, baking powder, and salt until they are well combined.
  • Mix in Wet Ingredients: Stir in the eggs, melted butter, and vanilla extract. Then, gently mix in the brewed coffee (or water) until your batter is smooth and lump-free.
  • Fill the Pan: Carefully spoon the batter into the wells of your donut pan. If you have a six-well pan, you might need to bake in two batches.
  • Bake Until Perfect: Bake for 16 to 20 minutes, or until the donuts are set and feel firm when lightly touched. Let them cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
  • Whisk the Base: In a shallow bowl, whisk together the powdered sweetener and cocoa powder. Add the heavy cream and vanilla extract, continuing to whisk until smooth.
  • Achieve Dippable Consistency: Gradually add water or cold coffee, a little at a time, until the glaze thins out to a nice "dippable" consistency without being too watery.
  • Glaze and Set: Once the donuts are completely cool, dip the top of each donut into the prepared glaze. Feel free to add any keto-friendly sprinkles if you like! Let the glaze set for about 30 minutes before enjoying your healthy chocolate treat.
