  • 1/3 cup Swerve Sweetener
  • 3 tablespoons cocoa powder
  • 2 tablespoons unflavored whey protein powder (or egg white protein powder)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/3 cup brewed coffee (or water for a milder flavor)

Glaze

  • 1/4 cup powdered Swerve Sweetener
  • 1 tablespoon cocoa powder
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Water or cold coffee as needed (for glaze consistency)

Instructions
 

  • 1. Get Ready: First, preheat your oven to a cozy 325°F. Be sure to generously grease your donut pan – this helps them pop out perfectly!
  • 2. Mix Dry Goodness: In a medium bowl, gently whisk together your coconut flour, Swerve sweetener, cocoa powder, protein powder (if using), baking powder, and a pinch of salt. This creates your dry base.
  • 3. Combine Wet & Dry: Add the eggs, melted butter, and vanilla extract to your dry mixture. Stir well, then pour in the brewed coffee (or water) and mix until everything is smoothly combined into a delicious batter.
  • 4. Fill & Bake: Carefully spoon the batter into each well of your prepared donut pan. Don't overfill! Pop it into the preheated oven and bake for 16 to 20 minutes, or until the donuts feel firm and springy when lightly touched.
  • 5. Cool Down: Once baked, let your donuts cool in the pan for about 10 minutes. Then, gently flip them onto a wire rack to cool completely. Patience is key for perfect glazing!
  • 6. Whip Up the Glaze: While the donuts cool, whisk together the powdered Swerve and cocoa powder in a shallow bowl. Stir in the heavy cream and vanilla extract until smooth.
