Start by placing your roasted hazelnuts into a strong food processor or high-powered blender. Process them until they're finely ground and begin to stick together, forming a crumbly paste.
Now, add 2 tablespoons of hazelnut oil to the processor. Continue to blend, scraping down the sides occasionally, until the mixture becomes wonderfully smooth and resembles a creamy nut butter.
Next, add the cocoa powder, powdered sweetener, collagen protein (if you're using it), vanilla extract, and a pinch of salt. Pour in the remaining 1 tablespoon of hazelnut oil and blend again until everything is perfectly combined and super smooth.
