  • 3 Tablespoons almond flour
  • 1 Tablespoon unsweetened cocoa powder
  • 2 Tablespoons sugar-free granulated sweetener (like erythritol or Swerve)
  • 0.5 teaspoon baking powder
  • 1 large egg beaten
  • vanilla extract A splash (optional, for extra flavor)
  • 4 small squares Lily's Dark Chocolate Bar (or similar sugar-free dark chocolate)

Instructions
 

  • In a microwave-safe ramekin or mug, gently melt the butter for about 10 seconds until just liquid. Swirl the melted butter around the inside of the dish to create a natural non-stick coating – a healthy way to prevent sticking!
  • Add the almond flour, cocoa powder, sugar-free sweetener, baking powder, and the beaten egg to the ramekin. Mix everything really well with a fork until you have a smooth, rich batter.
  • Carefully place the four chocolate squares right in the center of your batter. These will melt into the delicious "lava" center!
  • Microwave on high for just 60 seconds. It's crucial not to overcook it; we want that perfectly moist cake and gooey center, not a dry one!
  • Once cooked, carefully flip the ramekin upside down onto a serving plate. You might need a gentle tap or a spoon to help the beautiful lava cake slide out.
