  • 1 ½ Tablespoons almond flour
  • 4 teaspoons Swerve Confectioners (or other erythritol-based sweetener)
  • 10 drops stevia liquid (adjust to taste)
  • 2 Tablespoons heavy cream
  • 1 Tablespoon low carb chocolate chips (like Lily's)

Instructions
 

  • Start by lightly greasing two small microwave-safe bowls or mugs with cooking spray or a touch of coconut oil. This helps your cake pop right out!
  • In a separate small bowl, whisk together the melted butter, creamy almond butter, egg yolk, and fragrant vanilla extract until everything is smoothly combined.
  • Next, gently fold in the unsweetened cocoa powder, almond flour, Swerve Confectioners, stevia drops, and heavy cream. Mix until the ingredients are just combined into a delicious batter – try not to overmix!
  • Divide this chocolatey batter evenly between your two prepared mugs. Sprinkle the low-carb chocolate chips generously on top.
  • Pop each mug into the microwave and cook for about 1 to 1.5 minutes. You're looking for the edges to be set, but the center to still be wonderfully soft and fudgy, like a molten lava cake. Enjoy warm for the best experience!
