Ingredients
  

Popsicle Filling

  • 4 ounces cream cheese softened
  • 1/2 cup creamy peanut butter natural, unsweetened recommended
  • 1/3 cup powdered sweetener such as allulose or erythritol, or a blend
  • 1/2 cup unsweetened almond milk or your preferred low-carb milk
  • 1/3 cup heavy cream
  • 1/2 teaspoon vanilla extract

Chocolate Coating

  • 2 ounces sugar-free dark chocolate chopped
  • 1/2 ounce cocoa butter chopped (or 1 tablespoon coconut oil)

Garnish (optional)

  • 1 tablespoon chopped peanuts

Instructions
 

  • Whip up the filling: In a large bowl, combine the softened cream cheese and creamy peanut butter. Beat them together until the mixture is wonderfully smooth and lump-free.
  • Add the good stuff: Next, incorporate your chosen powdered sweetener, unsweetened almond milk, heavy cream, and vanilla extract. Beat everything until it's well combined and has a consistently creamy texture.
  • Fill the molds: Carefully spoon or pipe this delicious mixture into 8 popsicle molds. Gently tap the molds on your counter a few times to release any hidden air bubbles and ensure an even fill.
  • Insert sticks and freeze: Carefully push a popsicle stick about two-thirds of the way into each filled mold (wooden sticks tend to stay in place better!). Place the molds in the freezer for at least 4 hours, or until the popsicles are completely firm.
  • Prep for dipping: Line a small baking sheet with parchment or waxed paper and place it into the freezer to chill. This will help the chocolate set quickly.
  • Melt the chocolate magic: Create a double boiler by setting a heatproof bowl over a small pan of barely simmering water. Add the chopped sugar-free dark chocolate and cocoa butter (or coconut oil) to the bowl. Stir continuously until the chocolate is beautifully melted and smooth. Remove the bowl from the heat.
  • Dip and decorate: Quickly take one frozen popsicle from its mold (you can run warm water over the mold briefly to help release it). Dip the popsicle about halfway into the melted chocolate coating, allowing any excess to drip back into the bowl. If desired, sprinkle a few chopped peanuts onto the wet chocolate.
  • Final freeze: As soon as the chocolate begins to firm up, place the dipped popsicle onto your chilled baking sheet in the freezer. Repeat this process with the remaining popsicles. Keep them frozen until you're ready to enjoy these healthy, satisfying treats!
