Ingredients
  

  • 2 cups salted peanuts
  • 8 ounces sugar-free semi-sweet chocolate finely chopped
  • 1/3 cup creamy peanut butter no added sugar
  • 1/2 tsp vanilla extract

Instructions
 

  • Gently melt the chopped sugar-free chocolate and creamy peanut butter in a microwave-safe bowl. Microwave for 1 minute, then whisk until smooth. If needed, heat for additional 10-second intervals, stirring each time, until fully melted and creamy. Be careful not to overheat to keep it silky!
  • Stir in the vanilla extract until it's well combined with the chocolate and peanut butter mixture, adding a lovely warm flavor.
  • Add the salted peanuts to the bowl, then stir everything together really well, making sure every peanut is coated in the delicious chocolate mixture.
  • Using a spoon or a small cookie scoop, drop spoonfuls of the chocolate peanut mixture onto a baking sheet lined with parchment paper, forming small clusters.
  • Place the baking sheet in the fridge and chill for at least 1 to 2 hours, or until the clusters are completely firm. Once set, they're ready to enjoy as a perfect healthy treat!
