Ingredients
  

  • 3/4 cup heavy whipping cream
  • 1 teaspoon instant espresso powder (or instant coffee)
  • 4 ounces unsweetened chocolate chopped
  • 1/3 cup powdered sweetener
  • 2 tablespoons butter cut into two pieces
  • 1/2 teaspoon vanilla extract
  • 3 1/2 ounces sugar-free dark chocolate chips
  • 1/2 ounce cocoa butter
  • 24 whole coffee beans (for decoration)

Instructions
 

  • Gently heat the heavy cream and espresso powder in a medium saucepan until it just begins to simmer. Take it off the heat, stir in the chopped unsweetened chocolate, and let it sit for about 5 minutes to melt into a smooth mixture.
  • Add the powdered sweetener, butter, and vanilla extract. Whisk everything until it's perfectly smooth and glossy. Pop the mixture into the refrigerator for about an hour until it's firm enough to easily roll.
  • Scoop out about a tablespoon of the chilled mixture, and quickly roll it into small, neat balls with your hands. Place these on a cookie sheet lined with waxed paper and freeze for an hour to firm them up.
  • Create a simple double boiler by placing a heatproof bowl over a saucepan with a little simmering water (make sure the bowl doesn't touch the water). Add the sugar-free dark chocolate chips and cocoa butter to the bowl, stirring gently until completely melted and smooth.
  • Carefully dip each frozen truffle into the melted chocolate, using two forks to ensure it's fully coated. Lift it out, tapping gently against the bowl's edge to remove any extra chocolate, then place it back on the waxed paper-lined baking sheet.
  • While the chocolate coating is still warm and soft, gently press one whole coffee bean onto the top of each truffle for a decorative touch. Let them set completely until the chocolate is firm.
