  • 1 1/2 cups Almond Flour
  • 1 teaspoon Baking Powder
  • 1 large Egg
  • 1/2 teaspoon Vanilla Extract
  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 6 tablespoons Melted Butter

Cream Cheese Filling

  • 5 ounces Cream Cheese softened
  • 1/2 cup Heavy Whipping Cream at room temperature
  • 1/3 cup Swerve Confectioner's Sugar Substitute for filling
  • 1 teaspoon Vanilla Extract for filling
  • Christmas Sprinkles optional, for garnish

Instructions
 

  • Start by preheating your oven to 350°F (175°C) and lightly grease the sections of a mini muffin tin – this ensures your cookie cups pop out easily!
  • In a medium mixing bowl, combine all the ingredients for your cookie cups (almond flour, baking powder, egg, 1/2 tsp vanilla, 1/3 cup Swerve, and melted butter) until everything is well blended and forms a nice, pliable dough.
  • Gently press this dough into each section of your prepared mini muffin tin. Make sure to shape it up the sides to create a cup, and hollow out the center for your delicious filling.
  • Bake for about 10-12 minutes, or until they look lightly golden and cooked through. Keep an eye on them so they don't over-brown!
  • If any of your cookie cups puff up a bit too much during baking, just use the back of a small spoon (or the end of a wooden kitchen spoon) to gently press the center down right after taking them out of the oven. Let them cool completely in the tin before removing.
  • While the cookie cups cool, whip up your creamy filling! In another bowl, beat together the softened cream cheese, heavy whipping cream, 1/3 cup Swerve, and 1 tsp vanilla until it's wonderfully smooth, creamy, and fluffy.
  • Once your cookie cups are fully cooled, carefully remove them from the tin. Pipe or spoon this delightful cream cheese filling into each one. Finish with a sprinkle of festive Christmas sprinkles if you like, and they're ready to enjoy!
