Keto Chocolate Sandwich Cookies
Instructions
Place the sugar-free milk chocolate chips into a small, microwave-safe bowl. Heat in the microwave for 45 seconds.
Remove and stir well. Continue microwaving in short 10-second bursts, stirring after each, until the chocolate is fully melted and smooth.
Pour the melted milk chocolate onto a small baking sheet lined with a Silpat mat or parchment paper. Spread it out evenly using an offset spatula.
Pop the baking sheet into the fridge for a few minutes, just until the chocolate layer begins to firm up.
While the milk chocolate sets, roughly chop the Keto chocolate sandwich cookies into small pieces. Have them ready to sprinkle!
In another small, microwave-safe bowl, repeat the melting process with the sugar-free white chocolate chips, following steps 1 and 2.
Let the melted white chocolate cool slightly so it's not too hot, but still liquid.
Pour the cooled white chocolate over the firm milk chocolate layer and spread it evenly across the surface.
Immediately sprinkle the crushed cookies over the wet white chocolate. You'll need to work fast before the chocolate sets!
Return the bark to the fridge and let it chill completely until it's solid.
Once firm, break the bark into irregular, delicious pieces and enjoy your healthy, easy-to-make treat!
