Instructions
Place cottage cheese, cocoa powder, erythritol, vanilla, and salt into a blender or food processor. Blend until smooth and creamy, scraping down sides as needed.
Taste and add more sweetener if desired.
Divide the mousse into two bowls or cups and refrigerate for 30 minutes for optimal flavor.
Before serving, top with berries, cocoa nibs, or a dusting of cocoa powder if you like.
