Ingredients
  

  • 1 cup Full-fat cottage cheese 240g
  • 2 tbsp Unsweetened cocoa powder 12g
  • 2 tbsp Powdered erythritol or keto sweetener 24g
  • 1 tsp Vanilla extract 5ml
  • a pinch Salt
  • Optional garnish: fresh berries or cocoa nibs for topping

Instructions
 

  • Place cottage cheese, cocoa powder, erythritol, vanilla, and salt into a blender or food processor. Blend until smooth and creamy, scraping down sides as needed.
  • Taste and add more sweetener if desired.
  • Divide the mousse into two bowls or cups and refrigerate for 30 minutes for optimal flavor.
  • Before serving, top with berries, cocoa nibs, or a dusting of cocoa powder if you like.
