Keto Cottage Cheese Pancakes

  • Non-Stick Skillet
  • Blender

Ingredients
  

  • 3/4 cup almond flour
  • 1/2 cup full-fat cottage cheese
  • 2 large eggs
  • 1 tbsp unsalted melted butter
  • 1 tbsp granulated sweetener like Sukrin
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch salt
  • cooking oil for frying

Instructions
 

  • Heat a non-stick skillet over medium-low heat.
  • In a bowl, combine all ingredients and blend using an immersion blender, or a countertop blender/food processor.
  • Lightly grease the skillet with oil.
  • Pour 1/4 cup of batter into the skillet and spread gently.
  • Cook for 2 minutes until bubbles form, then flip and cook for another 2 minutes until golden brown.
  • Repeat with remaining batter. Serve with your favorite toppings.
