Keto Cottage Cheese Pancakes
These pancakes are fluffy, creamy, and utterly satisfying with every bite!

- 3/4 cup almond flour
- 1/2 cup full-fat cottage cheese
- 2 large eggs
- 1 tbsp unsalted melted butter
- 1 tbsp granulated sweetener like Sukrin
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch salt
- cooking oil for frying
Heat a non-stick skillet over medium-low heat.
In a bowl, combine all ingredients and blend using an immersion blender, or a countertop blender/food processor.
Lightly grease the skillet with oil.
Pour 1/4 cup of batter into the skillet and spread gently.
Cook for 2 minutes until bubbles form, then flip and cook for another 2 minutes until golden brown.
Repeat with remaining batter. Serve with your favorite toppings.
