Preheat your oven to 350°F (175°C) and lightly grease an 8x4 inch metal loaf pan.
In a big bowl, whisk together the coconut flour, brown sugar substitute, protein powder, baking powder, and salt until everything is well combined.
Stir in the melted butter, eggs, fresh orange zest, orange extract, and vanilla extract. Mix well, then gradually add the water until the batter is smooth and easy to spread. If it seems too thick, add an extra tablespoon of water.
Gently fold in the halved cranberries and the optional chopped walnuts or pecans. Pour the batter into your prepared loaf pan and smooth the top evenly.
Pop it in the oven for 50 to 60 minutes, or until it's beautifully golden brown and firm when you lightly touch it.
Let the bread cool in the pan for at least 30 minutes. Then, carefully run a knife around the edges of the loaf, transfer it to a wire rack, and let it cool down completely before slicing and enjoying!
