Instructions
Heat olive oil in a skillet over medium-high heat.
Season chicken thighs with salt and pepper, then sear until browned and cooked through. Remove and set aside.
Lower heat, melt butter in the same skillet.
Add chopped onion and sauté until soft.
Stir in garlic and spinach, cooking until spinach wilts.
Mix honey and Dijon mustard, then pour into the skillet.
Add heavy cream, stirring until the sauce thickens.
Season with salt and pepper. Return chicken to the skillet, coat with sauce, sprinkle bacon on top, and serve.
