Ingredients
  

Chicken Thighs

  • 5 pieces boneless, skinless chicken thighs about 1.5 lbs
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 2 tbsp butter
  • 1/2 onion onion, chopped
  • 2 tsp minced garlic
  • 3 cups raw spinach
  • 2 tbsp sugar-free honey
  • 2 tbsp Dijon mustard
  • 4 slices bacon cooked and crumbled

Instructions
 

  • Heat olive oil in a skillet over medium-high heat.
  • Season chicken thighs with salt and pepper, then sear until browned and cooked through. Remove and set aside.
  • Lower heat, melt butter in the same skillet.
  • Add chopped onion and sauté until soft.
  • Stir in garlic and spinach, cooking until spinach wilts.
  • Mix honey and Dijon mustard, then pour into the skillet.
  • Add heavy cream, stirring until the sauce thickens.
  • Season with salt and pepper. Return chicken to the skillet, coat with sauce, sprinkle bacon on top, and serve.
