Ingredients
  

  • 12.5 oz canned chicken well-drained
  • 1.5 cups coleslaw mix
  • 1/3 cup matchstick carrots
  • 1/4 cup chopped green onions
  • 1/3 cup plain Greek yogurt
  • 1/2 tsp sugar-free honey
  • 1 tsp Dijon mustard
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • On a parchment-lined baking sheet, create 8 evenly sized cheese circles. You may need to do this in batches.
  • Bake the cheese in the oven for 8-10 minutes until the edges turn golden and crispy.
  • In a bowl, mix together the remaining ingredients.
  • After 2 minutes, take the cheese out of the oven to cool slightly.
  • Spoon the chicken mixture down the center of each cheese circle.
  • Carefully roll the cheese over the filling.
  • Let the roll-ups cool and crisp before serving.
