Instructions
Preheat your oven to 400°F (200°C).
Place the cheese into 8 circles on a parchment-lined baking sheet, using two sheets if necessary.
Bake for 6-8 minutes until the edges turn golden and crispy.
While the cheese bakes, mix the dressing ingredients together.
After baking, let the cheese circles cool for 1 minute.
Layer each circle with corned beef, sauerkraut, and a drizzle of dressing.
Quickly fold the cheese over the filling before it hardens.
Let the roll-ups cool and crisp before serving.
