Equipment

  • Microwave-safe Bowl
  • Whisk
  • Melon baller or small spoon

Ingredients

  • 1 cup Sugar-Free Milk Chocolate Chips
  • 3/4 cup Heavy Cream
  • 3 tablespoons Butter
  • 1/4 cup Powdered Sugar Substitute (like Swerve)
  • 1 1/2 teaspoons Vanilla Extract

Optional Toppings

  • Unsweetened Cocoa Powder
  • Unsweetened Coconut Flakes
  • Chopped Nuts (like pecans or almonds)

Instructions

  • Prepare the Base: In a large microwave-safe bowl, gently whisk together the heavy cream and your powdered sugar substitute until they are well combined.
  • Melt the Chocolate: Add the sugar-free chocolate chips and butter to the bowl. Microwave for 1 minute, then give the mixture a good stir. Return to the microwave for another 1 minute.
  • Create Ganache: Carefully stir everything together with a whisk until you achieve a beautifully smooth and creamy consistency. Let this delicious ganache rest in the bowl for 10 minutes.
  • Chill to Firm: Cover the bowl and place it in your refrigerator to firm up properly. For the best results, chill for at least 3 hours, or even better, let it sit overnight. This cooling time is essential for easy shaping!
  • Shape the Truffles: Once the ganache is firm, use a melon baller or a small spoon to scoop out small portions of the chocolate mixture. Gently roll each portion between your palms to form smooth, round truffles.
  • Coat and Customize: Roll your freshly shaped truffles in any of your chosen optional toppings – whether it's rich cocoa powder, tropical coconut flakes, or crunchy chopped nuts – to add extra flavor and texture.
  • Serve & Store: Keep your delightful keto truffles stored in the refrigerator until you are ready to indulge. Enjoy these healthy, sweet treats!
