Keto Frittata with Bacon and Brie

Ingredients
  

  • 8 slices bacon chopped
  • 8 large eggs
  • 1/2 cup heavy whipping cream
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 ounces brie cheese thinly sliced (easiest when cold)

Instructions
 

  • Begin by cooking the chopped bacon in a 10-inch oven-safe skillet over medium heat until it's delightfully crisp. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate to drain. Leave about 2 tablespoons of the bacon grease in the skillet, then remove it from the heat and let it cool slightly.
  • In a large bowl, whisk together the eggs, heavy cream, minced garlic, salt, and pepper until well combined. Stir in about two-thirds of your crispy cooked bacon.
  • Place the skillet back on medium-low heat and swirl the remaining bacon grease to coat the bottom and sides evenly. Pour the egg mixture into the skillet. Cook gently, without stirring, until the edges are set but the center is still a bit jiggly, usually 7 to 10 minutes.
  • Carefully arrange the thinly sliced brie cheese over the top of the frittata, distributing it evenly. Sprinkle the remaining bacon over the cheese.
  • Preheat your broiler to high and adjust an oven rack to the second-highest position. Broil the frittata for 2 to 5 minutes, watching very closely, until it's beautifully puffed and golden brown. Remove from the oven and let it cool for a few minutes before slicing and serving.
