Crisp the Bacon: In a 10-inch oven-safe skillet, cook your chopped bacon over medium heat until it's beautifully crisp. Use a slotted spoon to remove the bacon and let it drain on a paper towel. Leave about 2 tablespoons of the flavorful bacon grease in the skillet and allow it to cool slightly.
Whisk the Eggs: In a large bowl, whisk together the eggs, heavy whipping cream, minced garlic, salt, and pepper until well combined. Stir in about two-thirds of your cooked, crispy bacon.
Start on Stovetop: Place the skillet back on medium-low heat, swirling the remaining bacon grease to coat the bottom and sides. Pour the egg mixture evenly into the skillet. Cook undisturbed for 7 to 10 minutes, until the edges are set but the center still jiggles a bit.
Add Brie & Finish: Neatly arrange the thinly sliced brie over the top of the frittata. Then, sprinkle the remaining crispy bacon over the brie.
Broil to Perfection: Preheat your broiler to high and set an oven rack on the second-highest position. Carefully transfer the skillet to the oven. Broil for 2 to 5 minutes, watching very closely, until the frittata is puffed up and golden brown on top.
