  • 1 cup flaked coconut
  • 1/2 cup almonds
  • 1/2 cup pumpkin seeds
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/3 cup butter or a dairy-free alternative for a healthier twist!
  • 1/4 cup brown sugar replacement like erythritol or monk fruit blend
  • 1/4 cup powdered Swerve Sweetener or your preferred keto powdered sweetener
  • 1/2 teaspoon vanilla extract or maple extract

  • Get your oven ready! Preheat it to 300°F (150°C) and line a big baking sheet with parchment paper. This makes cleanup a breeze!
  • Time to get nutty! In your food processor, combine the pecan halves, flaked coconut, almonds, pumpkin seeds, and a pinch of salt. Pulse until everything looks like coarse crumbs – a few bigger pieces add great texture!
  • Melt and mix! In a large saucepan over low heat, gently melt the butter with your brown sugar replacement and powdered Swerve. Whisk until smooth and the sweeteners are mostly dissolved. Take it off the heat and stir in your vanilla (or maple) extract for that delicious aroma.
  • Combine and press! Pour your nut and seed mixture into the melted butter mixture. Stir well until everything is evenly coated. Then, transfer this yummy mix to your prepared baking sheet. Cover with another piece of parchment paper and press down firmly and evenly to get a nice, compact layer.
  • Bake to perfection! Pop it in the oven for 20 to 30 minutes, or until it's beautifully golden brown. Let it cool *completely* on the pan before breaking it into satisfying large chunks. This is key for that perfect crunch!
