1cupbeef broth(or any broth you prefer)
Instructions
First, collect your rich meat drippings from your roast or turkey. If you don't have any, you can make your own by roasting 2 to 4 pounds of turkey legs, wings, or neck at 400°F (200°C) for about 1.5 hours, then strain the drippings through a fine-mesh sieve into a bowl.
Heat a saucepan over medium-low heat. Once it's warm, add the butter, along with your desired amount of salt and pepper.
Let the butter gently melt, stirring occasionally. Continue cooking until it starts to brown slightly – this step really deepens the flavor! This usually takes about 4-5 minutes in a thin non-stick pot, or 8-10 minutes in a thicker cast-iron pot.
As soon as the butter achieves that lovely golden-brown color, reduce the heat. Gradually whisk in the xanthan gum, adding it slowly to prevent lumps. Keep whisking for 3-4 minutes until the butter mixture begins to thicken beautifully.
While continuously whisking, pour in your collected meat drippings, the broth, and the soy sauce (or tamari). Continue mixing for about 5 minutes until your low-carb gravy reaches your desired smooth and thick consistency. Serve immediately and savor every delicious drop!
