For the Cookies

  • 0.75 cup salted butter softened (1.5 sticks)
  • 0.75 cup powdered monkfruit/erythritol sweetener
  • 1 large egg at room temperature
  • 1.25 tsp vanilla extract
  • 0.25 tsp peppermint extract (or almond extract, optional)
  • 1.5 cups almond flour
  • 0.5 cup coconut flour
  • 1 tbsp arrowroot starch (or cornstarch)
  • 1 tsp xanthan gum
  • 0.125 tsp baking powder
  • 0.125 tsp salt (use 1/4 tsp if your butter is unsalted)
  • Green gel food coloring (or mix yellow with a touch of blue)

For the Icing

  • 3 tbsp powdered monkfruit/erythritol sweetener
  • 0.25 tsp meringue powder
  • 2 tsp water to 1 1/2 tbsp, add gradually to reach desired consistency
  • Red gel food coloring

Instructions
 

  • 1. Get Ready to Bake: Preheat your oven to 350°F (175°C).
  • 2. Cream It Up: In a spacious bowl, beat the softened butter and powdered sweetener until the mixture is light and fluffy. Then, blend in the egg and your chosen extracts until smooth.
  • 3. Go Green! Carefully add a tiny bit of green gel food coloring to the batter. Mix it in well, adding more drops as needed until you achieve that perfect Grinchy green hue.
  • 4. Whisk Dry Ingredients: In a separate bowl, combine the almond flour, coconut flour, arrowroot starch, xanthan gum, baking powder, and salt. Give them a good whisk to make sure they're all mixed together evenly.
  • 5. Form the Dough: Gently pour the dry ingredients into the green wet mixture. Stir everything thoroughly until a thick, uniform dough forms.
  • 6. Shape and Bake: Lightly grease a baking sheet. Roll small portions of the dough into balls, then arrange them evenly spaced on the sheet. Lightly flatten each cookie. Bake for 9-11 minutes until the bottoms are lightly golden. Don't worry if they feel soft; they'll firm up as they cool.
  • 7. Cool Down: Let the cookies cool completely on the baking sheet before carefully transferring them to a plate or wire rack. This helps them set.
  • 8. Prepare the Icing: For the heart decoration, mix the powdered sweetener, meringue powder, and water in a small bowl until the icing is thick enough to pipe. Stir in the red gel food coloring to get a vibrant red.
  • 9. Decorate with Hearts: Transfer the red icing to a small zip-top bag and snip off a very tiny corner (or use a piping bag with a fine tip). Pipe small heart shapes onto your cooled green cookies. You can just outline the hearts or fill them in completely.
  • 10. Set and Serve: Allow the red icing to harden on the cookies before sharing your festive, healthy treats!
