  • 1 pound Ground Beef
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon black pepper
  • 1 Green Bell Pepper chopped
  • 2 medium Zucchini chopped
  • 1 cup Eden Black Soy Beans rinsed
  • 2 tablespoons tomato paste

Instructions
 

  • In a large skillet, heat it over medium-high heat. Add your ground beef, salt, and pepper. Cook the beef, breaking it apart as it browns, until it's completely cooked through. Drain any extra grease to keep it light and healthy.
  • Toss in the chopped green bell pepper and zucchini. Lower the heat to medium and let it all cook for about 10 minutes, or until the zucchini becomes tender when poked with a fork.
  • Stir in the rinsed black soy beans and the tomato paste. Continue cooking for another 5 minutes to let the flavors meld beautifully. Taste and add more salt and pepper if you like, then serve this delicious and easy meal right away!
