Ingredients
  

Cookie Dough

  • 0.5 cup butter softened
  • 0.5 cup allulose or other low-carb sweetener
  • 1.5 cups almond flour finely ground
  • 1 tsp pumpkin spice

Icing

  • 6 tbsp allulose
  • 2 oz cream cheese softened
  • 1 tbsp cream
  • black food coloring optional, for eyes

Instructions
 

  • In a bowl, beat the softened butter and sweetener until creamy. Add almond flour and pumpkin spice, mixing until a soft dough forms.
  • Pop the dough into the fridge for 30 minutes so it firms up.
  • Preheat oven to 350°F (180°C). Roll the dough between two sheets of parchment paper. Use a Halloween-shaped cutter to make cookies. Place on a parchment-lined baking sheet.
  • Bake 15–20 minutes, until edges turn golden. Let cool completely on the tray.
  • Whisk together the icing ingredients until smooth. Spoon into a piping bag.
  • Pipe mummy wraps or skeleton bones onto the cooled cookies. For eyes, mix a tiny bit of black food coloring with a little icing.
