Ingredients
  

  • 2 cups Almond Flour
  • 0.25 cup Granular Sugar Substitute
  • 0.25 tsp Salt
  • 5 tbsp Butter
  • 2 cups Cottage Cheese
  • 5.3 ounces Greek Yogurt Plain
  • 8 ounces Cream Cheese
  • 0.33 cup Granular Sugar Substitute
  • 2 Eggs
  • 2 Lemons zest and juice
  • 2 tsp Vanilla Extract
  • 0.25 tsp Salt
  • 2 tsp Xanthan Gum
  • Powdered Sugar Substitute as garnish

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, whisk together the almond flour, sugar substitute, and salt.
  • In a small microwave-safe bowl, melt the butter. Stir the melted butter into the flour mixture until crumbly.
  • Press the mixture into a 9-inch pie shell or springform pan, evenly along the bottom and up the sides. Pierce the bottom with a fork, then bake for 16 minutes. Remove and set aside.
  • In a blender or food processor, combine cottage cheese, Greek yogurt, and cream cheese. Add sugar substitute, vanilla extract, salt, lemon zest, and juice. Mix until smooth.
  • Add eggs and xanthan gum, then blend until fully incorporated and smooth.
  • Pour the filling into the pre-baked crust. Bake at 350°F for 50 minutes. Remove and cool completely on a wire rack. Garnish with powdered sugar substitute if desired.

Notes

Feel free to adjust the sweetness with your preferred sugar substitute. For a more intense lemon flavor, add extra lemon zest.
