Ingredients
  

  • 2 cups Shredded Cheddar Cheese
  • 1/2 pound Ground Beef
  • 1/2 Onion (chopped)
  • 2 tbsp Dijon or Yellow Mustard
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 cup Diced Dill Pickles
  • 1 cup Shredded Lettuce
  • 1 Roma Tomato (chopped)
  • 1/3 cup Mayonnaise
  • 2 tbsp Sugar-Free Ketchup
  • 1 tbsp Finely Diced Pickles
  • 1 tsp Swerve Confectioner's Sugar Substitute
  • 1/2 tsp White Vinegar

Instructions
 

  • In a bowl, combine the sauce ingredients and whisk well. Reserve 3 tablespoons of the sauce.
  • Preheat your oven to 400°F (200°C).
  • In a skillet over medium-high heat, cook the ground beef and onions.
  • Add mustard, onion powder, garlic powder, and season with salt and pepper. Sauté until the meat is browned and onions are soft.
  • Drain excess grease and mix in the reserved sauce.
  • Line a baking sheet with parchment paper and form 8 cheese circles, baking until they look lacy.
  • Let cool for 1 minute, then add the meat mixture, lettuce, tomato, and pickles to each cheese circle.
  • Roll them up carefully and let cool to crisp. Serve with the remaining sauce.
