Pizza Roll Up Filling

  • 1/2 pound Natural Ground Italian Sausage
  • 1/2 chopped Onion
  • 1/2 chopped Green Bell Pepper
  • 2 tsp Minced Garlic
  • 1 cup shredded Mozzarella Cheese
  • 1/2 cup Ricotta Cheese
  • 1/2 tsp Italian Seasoning
  • 1/4 cup grated Parmesan Cheese

Instructions
 

  • In a skillet over medium-high heat, cook the ground Italian sausage with chopped onions and bell peppers. Stir frequently until the sausage is fully browned and the vegetables are softened and tender.
  • Add the minced garlic and cook for just 30 seconds more until fragrant. Remove the skillet from heat and let the mixture cool down a bit.
  • Transfer the cooled meat mixture to a mixing bowl. Stir in the shredded mozzarella, creamy ricotta, Italian seasoning, and grated Parmesan cheese until everything is well combined.
  • Lay out each zero-carb tortilla. Spoon a generous layer of the delicious filling down the center, then carefully roll each tortilla tightly to close.
  • Lightly coat a skillet with a thin layer of healthy oil and heat it over medium heat.
  • Place the rolled-up tortillas seam-side down in the hot skillet. Cook for a few minutes on each side until they are golden brown and wonderfully crispy.
