Ingredients
  

  • 1 large Chicken Breast
  • 3/4 cup Cottage Cheese
  • 2 stalks Celery Stalks diced
  • 2 pieces Green Onions sliced
  • 1/2 cup Shredded Cheddar Cheese
  • 3 tbsp Chopped Fresh Jalapeno
  • 5 slices Bacon cooked and crumbled
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Jalapeno
  • 1/4 cup Fresh Cilantro
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt
  • 2 limes Juice of 2 Limes

Instructions
 

  • Cook chicken breast based on your preference (baked, boiled, grilled). Once cooked through, shred and chop into small pieces. Set aside to cool.
  • Chop celery, green onions, and jalapenos.
  • In a large bowl, combine the shredded chicken, celery, onions, jalapenos, bacon, cottage cheese, and shredded cheddar cheese. Stir well.
  • In a food processor or blender, combine all of the DRESSING ingredients. Blend until smooth.
  • Pour the jalapeno dressing over the salad and toss.
  • Serve over salad greens, on keto bread, or enjoy as is!
