Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish.
In a medium bowl, combine the almond flour, melted butter, and 3 tablespoons of powdered sugar-free sweetener. Stir until the mixture is well blended.
Transfer the crust mixture into your prepared baking dish and gently press it down evenly to form the base. You can use the bottom of a flat cup or your fingers.
Place the dish in the preheated oven and bake for 20 minutes, or until the crust turns a light golden brown. Remove it from the oven and set aside.
While the crust is baking, prepare your lemon filling. In a blender or using an immersion blender, combine the beaten eggs, ½ cup powdered sugar-free sweetener, xanthan gum, lemon juice, and a pinch of salt. Blend until the mixture is completely smooth and creamy.
Carefully pour the smooth lemon filling evenly over the warm, baked crust in the dish.
Return the dish to the oven and bake for an additional 15 minutes, or until the filling is set and no longer jiggly in the center.
Take the lemon bars out of the oven and let them cool down for at least 10 minutes. For a pretty finish, sift a little extra powdered sugar-free sweetener over the top before cutting them into 9 perfect squares. Enjoy your refreshingly healthy and tangy-sweet treat!
