Ingredients
  

  • 3 large eggs
  • 1/3 cup Swerve Confectioners sweetener
  • 3 tablespoons allulose granular
  • 2 teaspoons grated lemon zest
  • 1/3 cup freshly squeezed lemon juice
  • 1/4 cup butter cut into 3 or 4 pieces

Instructions
 

  • Set up your double boiler: Place a heat-safe glass or ceramic bowl snugly over a saucepan containing a small amount of gently simmering water. Make sure the bottom of the bowl doesn't touch the water.
  • Whisk and thicken: In the bowl, combine the eggs, Swerve Confectioners, allulose, lemon juice, and lemon zest. Whisk continuously over the simmering water for about 10 minutes. Keep stirring until the mixture suddenly thickens, becoming luscious and creamy.
  • Add the butter: Immediately remove the bowl from the heat. Drop in the butter pieces and let them sit for a few minutes to soften and melt. Then, whisk everything together until the curd is wonderfully smooth and glossy.
  • Chill and enjoy: Pour your freshly made lemon curd into a clean container and refrigerate for 2 to 3 hours. This chilling time allows it to set perfectly, ready for you to savor!
