  • 1/2 cup granular sweetener keto-friendly
  • 3 large eggs gently beaten
  • 7 ounces plain Greek yogurt
  • 2 tsp vanilla extract
  • 1/4 cup fresh lemon juice
  • 1 lemon zest

Lemon Glaze

  • 2/3 cup powdered sweetener keto-friendly
  • 1/4 cup fresh lemon juice

  • Preheat your oven to a warm 400°F (200°C). Line a 12-cup muffin tin with paper liners and give them a quick spray with cooking oil – this ensures your delicious muffins won't stick!
  • In a large mixing bowl, combine the dry ingredients for your muffins: the almond flour, baking soda, salt, and granular sweetener. Give them a good whisk to ensure everything is evenly mixed.
  • Now, add the wet ingredients to your dry mix: the beaten eggs, Greek yogurt, vanilla extract, a splash of lemon juice, and the bright lemon zest. Stir everything together gently until just combined and smooth. Be careful not to overmix!
  • Carefully divide this lovely batter among your 12 prepared muffin cups.
