  • 1/2 cup whole milk ricotta drained
  • 2 1/2 cups almond flour
  • 1/3 cup Swerve Granular or your preferred keto granular sweetener
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 lemon zest from one lemon
  • 2 large eggs
  • 1/2 teaspoon lemon extract

Glaze

  • 1/3 cup Swerve Confectioners powdered sweetener
  • 1 tablespoon fresh lemon juice

Instructions
 

  • Drain the Ricotta: To start, line a fine-mesh sieve with a few paper towels or a coffee filter and set it over your sink or a bowl. Spoon the whole milk ricotta into the prepared sieve and allow it to drain for about 1 hour. This simple step helps remove excess moisture, ensuring your scones have the perfect texture!
  • Prep Your Oven & Pan: Preheat your oven to 325ยบF (160ยบC). Then, get a baking sheet ready by lining it with parchment paper or a silicone baking mat.
  • Mix the Dough: In a large mixing bowl, whisk together the almond flour, Swerve Granular, baking powder, salt, and the lovely lemon zest until they are well combined. Next, add in the well-drained ricotta, the eggs, and the lemon extract. Stir everything together gently until a soft, uniform dough forms.
  • Shape and Cut: Divide your dough in half. On the prepared baking sheet, gently pat each half into a round circle, about 5 to 6 inches in diameter. With a sharp knife or bench scraper, cut each circle into 6 even wedges, just like slicing a pie.
  • Bake Until Golden: Carefully use a spatula to lift and spread the scone wedges a few inches apart on the baking sheet. Pop them into the preheated oven and bake for approximately 25 minutes, or until they are beautifully golden brown and feel firm to the touch. Once baked, remove them from the oven and let them cool completely on the baking sheet.
