Instructions
Preheat your oven to 350°F (175°C). Place a silicone muffin pan on a baking sheet and set aside.
In a medium bowl, beat together melted coconut oil, melted butter, and eggs until smooth. Mix in the low carb sweetener and salt.
Gently fold in shredded coconut, white chocolate chips, chocolate chips, and chopped pecans until evenly combined.
Distribute the mixture evenly into silicone muffin cups, pressing down gently with a spoon or fingers.
Bake for 12-15 minutes until the tops are lightly browned.
Remove from oven and let cool for at least 20 minutes. Carefully remove cookies from molds and serve on a plate lined with paper towels.
