Ingredients
  

  • 1/4 cup Coconut Oil melted
  • 3 tbsp Butter melted
  • 2 Eggs
  • 3 tbsp Low Carb Brown Sweetener (Lakanto)
  • 1/2 tsp Salt
  • 1/2 cup Low Carb Chocolate Chips (Lily’s)
  • 1/2 cup Low Carb White Chocolate Chips (Lily’s)
  • 1 cup Shredded Unsweetened Coconut
  • 1 cup Chopped Roasted Pecans

Instructions
 

  • Preheat your oven to 350°F (175°C). Place a silicone muffin pan on a baking sheet and set aside.
  • In a medium bowl, beat together melted coconut oil, melted butter, and eggs until smooth. Mix in the low carb sweetener and salt.
  • Gently fold in shredded coconut, white chocolate chips, chocolate chips, and chopped pecans until evenly combined.
  • Distribute the mixture evenly into silicone muffin cups, pressing down gently with a spoon or fingers.
  • Bake for 12-15 minutes until the tops are lightly browned.
  • Remove from oven and let cool for at least 20 minutes. Carefully remove cookies from molds and serve on a plate lined with paper towels.
